Pistachio pasta pesto with stracciatella di burrata

Ingredients

200 g stracciatella di burrata

1 portion of pistachio pesto (see link below)

500 g spaghetti

Parmesan cheese, grated

Method

  1. Mix the stracciatella with half of the pesto.

  2. Cook the pasta according to pack instructions, reserving 1/3 cup of the cooking water (“tears of the gods”).

  3. Drain the pasta, return to the pan, add the pesto (without stracciatella) and stir through. Add a dollop of the stracciatella pesto and some of the cooking water, and stir again.

  4. Serve, with a dollop of stracciatella pesto on top and a sprinkle of parmesan cheese.
