Spicy, chewy ginger cookies
Ingredients
240g plain flour
1 1/2 tbsp ground ginger
1/2 tsp ground cloves
2 tsp ground cinnamon
1/2 tsp salt flakes
115g unsalted butter
100g caster sugar
1 medium egg
45g ginger syrup
2 balls of ginger in syrup, finely chopped
Method
Sift the dry ingredients into a mixing bowl and whisk to combine.
Beat the butter and sugar together until light in colour, then beat in the egg. Add the ginger syrup and chopped ginger, followed by the dry ingredients. Slowly mix then remove from the bowl, cover in baking parchment and refrigerate for 1 hour.
Preheat oven to 180°C.
Roll into balls (40g each) and coat in a mixture of caster sugar and cinnamon. Place on a lined baking sheet, spaced out,. and press down with a @nordicwareuk cookie stamp until the dough starts to squish out.
Bake for 14-16 minutes until golden.
