Cotswold Flour & FarmED

A fab couple of days spent in the Cotswolds with @cotswoldflour and @realfarmed, learning all things ‘Soil, Stone and Sourdough’. The day covered soil and regenerative agriculture, and a worm’s speed of travel (we’re talking years). We learnt about crop rotation, hedgerows and wildflowers 🌸, and conventional versus heritage wheat.

We had a tour of the mill with @bertiematthewscf. Who knew milling was so complicated, with plenty of ‘in out in out shake it all about’ (plus the requisite blue hairnets and beard nets).

Ten of us were invited (including yours truly) to create a new recipe using Cotswold flours, ready for an upcoming recipe booklet, giving us a delicious array of baked delights to feast on throughout the day. I made sablé sunflowers, using the Cotswold Maizebite Golden Flour Mix, filled with white chocolate ganache & @cherrytreepreserves lemon curd.

What a joy to meet like-minded people, who want to protect our planet and create magic with beautiful, planet-gentle ingredients.
