Amaretti biscuits
Ingredients
40 g egg whites (about 1 egg)
95 g caster sugar
170 g ground almonds
Zest from 1 orange
2 tbsp Amaretti Disaronno or Cointreau
50 g icing sugar
Method
Preheat the oven to 180 °C / 160 °C fan.
Whisk the egg whites until frothy, then add the caster sugar and whisk well.
Add the almonds, orange zest and liqueur and mix together.
Scoop out balls of dough (25 g each) and roll into balls.
Sift the icing sugar into a large shallow bowl. Place the amaretti in the icing sugar and cover completely. Sift over the rest of the icing sugar, so the biscuits are heavily coated. Leave to rest for 10 minutes.
Transfer the amaretti to baking trays lined with parchment paper.
Bake for 20-23 mins, until golden cracks appear. Remove from oven and allow to cool before serving.
